Hoppin' John Cakes

This is an easy recipe to make when you have leftover rice and black eyed peas.  It's good for breakfast or to pack for the 10 o'clock break or lunch.

Ingredients:

  • 2 cups leftover cooked rice
  • 2 cups leftover cooked black eyed peas
  • 1 egg
  • 1 heaping tablespoon oat flour
  • bacon fat or palm oil as needed for the pan

Instructions: 

  1. Mix the rice, black eyed peas, egg, and flour together.  Try to smash it up fairly well to release more of the peas into the rice.  Let this sit in the refrigerator for an hour.
  2. Heat up your pan, and put in enough fat to cover the cooking surface well.
  3. Form the peas and rice mixture into patties, and fry them on both sides.  Try not to move them until one side is browned well.  Add more oil as needed for the next batch.
These come out best if you don't make them too wide or too thin.  They should each be the size of a large cookie.
They're great with cooked greens or with the breakfast salad.
