A classic Mediterranean Breakfast consists of a simple salad, fresh fruit, two eggs, cheese, and a roll or piece of toast.
Most of it doesn't require special instructions except perhaps the salad. So here's the recipe for breakfast salad. You can multiply the recipe for more people.
Per person, you'll need:
Dice all the vegetables, and stir them and the rest in a bowl.
If you don't have prepared tahini, you'll need to make it from the paste. For a single serving, you'll just need to mix vigorously in a small bowl:
1 tablespoon tahini paste
1 teaspoon lemon juice
a dash of garlic
a good pinch of parsley
1 tablespoon water
Tahini is better than mayonaise unless you make your own very well. Store bought mayo almost always has some hydrogenated fats, so it's best avoided. Just about anything you can do with mayonaise is better done with tahini.
When the weather is hot, people's appetites tend to be low. Relatively few people have air conditioning in their home because electricity is prohibitively expensive. Besides, most buildings are old and were built before there was air conditioning. So people are very natural and try to take it easy during the day. Breakfast is light, usually some fruit and/or a pastry.
Because of needing to endure the heat throughout the day, many workers will eat a pastry and/or fruit with a salty cheese for breakfast or the 10 o'clock meal. This is because salt gets used better by the body to retain water, when it comes with a little carb and a lot of protein.
A favorite breakfast is a bureka (also called bourek or boureka) with salty cheese inside, with some olives or pickles and a boiled egg on the side. |
