Half Steamed Artichokes

A vegetable that is usually plentiful and inexpensive in Israel in December is the artichoke.  It is very easy to cook, and very nice with a simple butter dipping sauce.

Ingredients

  • 5 or 6 artichokes (as many as will fit somewhat tightly into a large pot.  There should be at least 1 for each person, so multiply this accordingly)
  • 1 teaspoon gray salt + 1/2 teaspoon later for the sauce
  • 1/8 cup vinegar
  • 200 g. butter
  • 2 tablespoons oat flour
  • 1 clove of garlic, chopped finely
  • 1 teaspoon dry parsley
  • 1 pinch of cracked black pepper
  • 1 cup of water
