Fried Hominy
For this recipe, you'll need freshly made or frozen hominy. Canned will not do.
Ingredients
300 g. chicken or turkey skin
1 kg. freshly made or frozen
hominy
1/8 cup chopped wild onions or chives
1 sweet red pepper
1 teaspoon gray salt
a pinch of cracked black pepper
1/4 teaspoon ground sage
1/4 cup water or turkey water (the watery drippings from roasting the turkey)
