Fried Hominy

For this recipe, you'll need freshly made or frozen hominy.  Canned will not do.

Ingredients

  • 300 g. chicken or turkey skin
  • 1 kg. freshly made or frozen hominy
  • 1/8 cup chopped wild onions or chives
  • 1 sweet red pepper
  • 1 teaspoon gray salt
  • a pinch of cracked black pepper
  • 1/4 teaspoon ground sage
  • 1/4 cup water or turkey water (the watery drippings from roasting the turkey)
