Honey Cornbread

This recipe isn't totally Native American.  It's meant to be a light cake-like bread for a holiday.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup white flour or the special gluten free substitute flour
  • 1/2 cup ground hazelnuts
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon gray salt
  • 1/2 cup honey
  • 4 eggs
  • 1/3 cup rendered fat or butter
  • 2/3 cup buttermilk or yogurt
  • extra fat to grease the pan
