Straight Up Cornbread

This is regular cornbread of the sort that was made as a sort of neutral bread, and is also good for making cornbread dressing.

Ingredients

  • 3 cups yellow cornmeal
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon gray salt
  • 3 eggs
  • 1/3 cup animal fat or butter
  • 1 cup buttermilk, yogurt, or water spiked with a tablespoon of vinegar
  • extra fat to grease the pan
