Wild Rice Dressing

This is a great wild rice dressing for Thanksgiving, or to use leftover wild rice.  To use up leftovers, just reduce the ingredients appropriately.

Ingredients

  • 6 cups cooked wild rice
  • 1 large onion or 1/2 cup wild onions or chives, chopped
  • 1/2 cup chopped pecans or hazelnuts, or sunflower seeds
  • 1 cup chopped onions
  • 1 green chile or sweet pepper, seeded and chopped
  • 1 cup chopped crab meat, surimi, or cooked oysters
  • 2 eggs, beaten
  • 2 tablespoons animal fat or butter
  • 1/4 teaspoon sage
  • 1/8 teaspoon black pepper if you didn't use chiles
  • 1 teaspoon gray salt
