Unless you need them cooked in a particular recipe, neckbones are something best prepared ahead. Put as much as will fit in a large pot or crock pot, slow cook them, and enlist the help of your kids to pick the meat off the bones. Don't throw those bones away though because cats and dogs absolutely love them. So give them to your pets as a nice treat.
Neckbone goes best with dishes that are highly seasoned such as tomato sauces, strong stews, and just about anything with ginger. When cooking them ahead though, they should only be seasoned with vinegar, salt, and pepper so they don't conflict with whatever dish you add them to. When you have them done right, you see that neck meat is the best thing for any kind of long pasta, green beans, or greens. You probably wont want your spaghetti sauce any other way once you see how the meat wraps around it perfectly.
