Turkey Pot Roast

Some times of year, turkey is very inexpensive, and you find some very nice breasts and thighs.  It's a shame in my opinion to mince up such wonderful roastable parts, so this is one of the things I do with it.

Ingredients

  • 1 turkey breast or 2 thighs, preferably with the skin and bones, but okay without
  • 1 large onion
  • 3 carrots
  • 5 potatoes
  • 1 stick of celery (with the leaves)
  • 1 clove of garlic
  • 1/2 cup oat or millet flour
  • 1/3 cup rendered beef, lamb, or pork fat
  • 1/4 cup fresh or 1 tablespoon dried parsley
  • 1 teaspoon each of cumin and curry
  • 1/2 teaspoon dry ginger
  • 1/4 teaspoon cracked black pepper
  • 1/4 cup pine nuts, sunflower, or sesame seeds
  • 1/8 cup vinegar (may need more if you like it saltier)
  • 1 and 1/2 teaspoons gray salt
