Tuna and Peppercorn Pasta Salad

When you have a desire for something starchy, it's a good idea to make a balanced dish.  Here in Israel, we call peppercorn pasta pteeteem, and they're often marketed elsewhere as Israeli couscous.  The original Italian name for them though, is acini di pepe.  There is also pearl pasta, which is slightly bigger.  If you can't find acini di pepe, you can also use orzo or risi.

Ingredients

  • 1 cup of leftover cooked acini di pepe
  • 2 cans of tuna in water, drained
  • 1 small onion
  • 1 stick of celery
  • 2 boiled eggs
  • 2 cucumbers
  • 1 tablespoon olive oil
  • 2 teaspoons cider vinegar
  • 1/8 teaspoon dry dill
